This Spiced Syrup was created at One & Only The Palm in Dubai and is featured on the Podcast Episode 2 and in the Spiced Sangria in Episode 11.

It gives a great Christmas feel to many drinks, as well as adding interest to other recipes.

Spiced Syrup Recipe

  • 500ml water
  • 500 grams Grandulated Sugar
  • 20g Cinnamon Bark
  • 20g Star Anise
  • 20g Cardamon
  • 20g Black Pepper (cracked)
  • 10g Cloves
  • Zest of 5 Lemons
  • Zest of 5 Limes


  1. Heat all ingredients to boiling point in a large pan.
  2. Stir until sugar is dissolved.
  3. Simmer at a rolling boil for 5 mins.
  4. Allow to cool naturally to room temperature.
  5. Strain ingredients out.
  6. Chill syrup.
