Just before my wedding at the beginning of April I entered my first real mixology competition (the online round).

With a brief to create two drinks, one signature serve and one more technical recipe the competition was for the brands Suze and Byrrh represented by Emporia Brands.

Here is my signature serve, the Romarin Fizz. The competition specified that the signature serve only Suze Romarin Fizz David Sangwellcontain up to 4 ingredients including the garnish, and no homemade ingredients without a commercially available alternative. Many competitions today include similar restrictions as it makes the drinks easily replicable without burdening bars with long prep.

Romarin Fizz Cocktail Ingredients

  • 1oz (30ml) Suze
  • 1/2oz (15ml) Simple Syrup
  • 1 Sprig Fresh Rosemary
  • Sparkling water

Nice and simple, see? Grab a shaker, add all the ingredients except the sparkling water with ice and shake hard for 12 seconds. Fine strain to remove any debris from the Rosemary over a block of ice in a rocks or double old fashioned glass, garnishing with a fresh sprig of rosemary and topping up with sparkling water.
