The Pornstar Martini is a modern staple of at least the UK cocktail scene, and the Mexican Pornstar adds some agave complexity to the formula.
The original, created by Douglas Ankrah combines vodka, vanilla, passion fruit and citrus with sparkling wine. Whether the champagne or Prosecco is served on the side or poured into the drink is a topic of much debate amongst bartenders. When I met Douglas, I had to ask the burning question of where the bubbles should live.
Originally it was served on the side as a palette cleanser. The half passionfruit floated in the drink was to be eaten with a spoon and the bubbles sipped, but as with anything else, it should be served however the guest likes it.
As a part of our Agave Month celebration of all things Mexican, we’re switching it up just a little. We’re replacing the vodka with a vanilla pod infused Creencias Tequila (as featured on our Casa Agave podcast) and using lime to cut through the passionfruit sweetness.
Creencias creates its bottles under the traditional work of Mexican matriarchs. Using natural raw materials, such as recycled glass, vegetable inks, jute and agave fibers to maintain complete sustainability and in keeping with organic traditions leading to a delicious product.
Mexican Pornstar Cocktail Recipe
- 1½oz (45ml) Vanilla infused Creencias Tequila
- 1oz (30ml) Passionfruit Puree
- ½ a fresh passionfruit
- ½oz (15ml) fresh lime juice
- 1oz (30ml) chilled Cava served on the side
Shake the first four ingredients with ice and fine strain into a chilled coupe glass. Garnish with the remaining half of the passionfruit floated in the drink. Serve with the chilled cava in a shot glass and a teaspoon for the passionfruit.
While quality Tequila is not to be served with salt and lemon, the ritual of shooting Tequila and the experience of following it is why it succeeded as a shot. In the same way, the experience of the Mexican Pornstar, just as the original is a key part of the journey of the drink.
