The last cocktail from our Birmingham Hoteliers event, our longest of the bunch. Martini Ambrato, Yuzu purée from ODK and lengthened with tonic water.

What is Yuzu?

Citrus junos[1][2] or yuzu (from Japanese ユズ) (or more precisely, Citrus × junos [C. reticulata × C. ichangensis]) is a citrus fruit and plant in the family Rutaceae. It is called yuja (from Korean 유자) in Korean cuisine context. Both Japanese yuzu and Korean yuja are cognates of Chinese yòuzi (柚子), but the Chinese word means pomelo. Yuzu is called xiāngchéng (香橙) in Chinese.

For our purposes, Yuzu is a small citrus fruit with a flavour somewhere between lime and grapefruit with some floral notes.

Its also a fruit that is difficult to find fresh, at least here in the UK which is why ODK’s purée is perfect for the job. Like the other purées in ODK’s range, it will stir into drinks easily making it great for arrival drinks or batching multiple drinks.

Martini Ambrato Yuzu Spritz Cocktail Recipe

  • 1oz (30ml Martini Ambrato Vermouth
  • ½oz (15ml) ODK Yuzu Purée
  • Fill with tonic water

Simply pour the ingredients together over ice and stir. I served this with a twist of lemon peel expressed over the drink and dropped into the top to add aroma.
