Luke Bensley of Bourne & Co
I started my bar career in Mitchel and Butlers before moving to Canada to be a ski instructor. Cocktails were more of a hobby of mine at that time. This turned into a great way to make rent and thus my love for this Industry began.
Upon my return to my home city I started at Bourne & Co. working under Mikey has given me the chance to vastly improve my craft and become fully involved with this industry’s in and outs.
Now I’m focused on continuing my journey in the hope to open my own bar in the near future.
Luke Bensley’s Cocktail, Manhattan Project #4
- 1oz (30ml) Gold of Mauritius
- ¾oz (25ml) PX Sherry
- ⅛oz (5ml) Cherry Heering
- ⅛oz (5ml) Montenegro Amaro
- 2 Dash Homemade Lemon Bitters
- 1 Dash Amargo Chuncho Bitters
Glass – Crystal Coupe
Garnish: Lemon Zest
Inspiration – I just really like a good Manhattan. So I started my Manhattan project to find my perfect serve. I prefer rum to bourbon and cherry flavours and the lemon helps cut through the sweetness, but it’s the balance sherry and amaro in this drink that has it sat at the top of my list.
