I was asked to help the guys at Trilogy Beverages judge the Gold of Mauritius cocktail competition over the past few weeks, with the top drinks being presented at RumFest in London.

Vincent presented his drink representing BarSmith, the Cherry on the Inside cocktail at the London heat of the Gold of Mauritius national cocktail competition in Clerkenwell & Social near Farringdon.

Cherry on the Inside Cocktail Recipe

  • 50ml Gold of Mauritius
  • Muddled Glace Cherry
  • Juice of half a fresh lemon
  • 50ml Egg white

The drink is dry shaken to combine the ingredients then a slice of fresh chilli is added and shaken with the drink with ice.

Cherry on the Inside is served with a lemon flag garnish on the rocks in an Old Fashioned glass.
