How to use Bitters in Cocktails – The Bitter Truth

It’s 10 years since Stephan Berg and Alexander Hauck, two former bartenders, developed and launched The Bitter Truth Range of Bitters and Liqueurs.

Since then, it has become the most awarded bitters range and has gone from strength to strength, developing bitters using a traditional manufacturing process based on authentic recipes using all natural ingredients.

For new bartenders, the array of tiny bottles can be imposing and confusing. Why do we use so little, can they really affect the flavour that much?

Welcome to the world of bitters. Here are a few suggestions on how to use your Bitter Truth Bitters.

The Bitter Truth – Aromatic BittersAromatic-Bitters-200ml

(200 ml, Alc. 39% Vol)

The Old Time Aromatic Bitters will add a good kick to your punch. The nose is full of clove and heady with gingerbread combined with the subtler tutti-frutti notes. Unsurpassed in complexity of favour, spices such as cinnamon, cardamom, anise and clove come through strong. As authentic as a brown leather Chesterfield, you can whack this little pugilist in with any wood aged spirit.

Old Fashioned

  • 50ml Koval Bourbon
  • 1 Sugar cube
  • 3 Dash The Bitter Truth Aromatic Bitters
  • Orange Zest

The Bitter Truth – Orange BittersOrange-Bitters-200ml

(200 ml, Alc. 39 % Vol)

On the nose it starts with a traditional marmalade scent. This is followed by a ton of clove, cinnamon and nutmeg (or baking spices as I call them). The rst taste, cardamom and caraway are pungent and the finishing number is fresh orange peel. This ingredient works super well in most traditional cocktails, especially an original martini’s, but does well with rums, whiskies and tequilas.

The Bitter Truth – Celery Bitters


(200 ml, Alc. 44 % Vol)

These Celery Bitters have an amazing bouquet of favours with white grape, Sencha tea, lemon grass, celery leaf and fresh root ginger on the nose. It juggles artistically on the tongue as well, adding coriander seed, fresh celery and chicory. Add to a Red Snapper for the thinking person’s Bloody Mary.  It’s great with grassy spirits and vermouth, try in a punch or just a simple gin and tonic.

Tequila Old Fashioned

  • 50ml Don Agustin Blanco
  • 10ml Aqua Riva Agave Syrup
  • 2 Dash The Bitter Truth Celery Bitters
  • 2 Dash The Bitter Truth Grapefruit Bitters

The Bitter Truth – Creole BittersCreole-Bitters

(200 ml, Alc. 39 % Vol)

With fruit scents of dried apricots, cherries and cranberries mingling with the strong flavours of anise, smoked paprika and hints of smoking pine wood. This bitters smells a sweet shop filled with liquorice. On the nose taste comes cayenne and pink pepper corns supported by anise, big red cinnamon, dusky caraway and fennel seed.

  • 12.5ml Amarula
  • 12.5ml Lime Juice
  • 2 Dash The Bitter Truth Creole Bitters
  • 20ml Mr Fitzpatrick’s Blood Tonic Cordial

Lemon Bitters has a decadent aroma of hot lemon tea with honey. Fresh, fruity and dense with spice, this little blonde has sherbet favours mingling with coriander seed and toasted cardamom. The pithy lemon brings out the charm in light or sharp mixed drinks and slips deliciously into gin or white rum cocktails.

Violet Russian Punch

  • 30ml Prairie Cucumber Vodka
  • 20ml The Bitter Truth Violet Liqueur
  • 15ml Sugar Syrup
  • 2 Dash The Bitter Truth Lemon Bitters
  • 10ml Cirtronade
  • Top with Prosecco

The Bitter Truth – Grapefruit BittersGrapefruit-Bitters-USA

(200 ml, Alc. 44 % Vol)

These bitters do not fail on representing citrus, you get both the bitter oils but also the classic sharp tang on the tongue too. Alongside that, there are vegetal tones and a dry hop finish. These bitters are best friends to Gin, Vodka, Tequila and white Rum and are a wonderful ingredient for sprits-heavy drinks.

Tequila Old Fashion

  • 25ml Don Agustin Blanco
  • 25ml Kamm & Sons
  • 25ml Absentroux Vermouth
  • 2 Dash The Bitter Truth Grapefruit Bitters

The Bitter Truth – Chocolate BittersChocolate-Bitters-USA

(200 ml, Alc. 44 % Vol)

Tall, dark and although not necessarily handsome, most definitely rich: with cocoa butter and dark chocolate on the nose, with hints of vanilla, cinnamon and bitter tones of gentian and wormwood on the palate. The Bitter Truth – Chocolate Bitters play exceptionally well with sweet Vermouths and all kinds of aged spirits like Whisky, Rum, Tequila and Brandy.

The professor would be proud. Strong Cloves follow by ginger and fresh tangerine oils with almonds slipping through, with dried fruit notes with a finish of orange peel and a light sprinkling of Angostura bark coming ager. This homage is as characterful as its name sake, so join in, get experimental and doff your hat to the man who brought us the first ever published cocktail book.

  • 5 Raspberries

Tonic Bitters were made to recreate exotic notes of citrus and spice, providing an authentic Gin and Tonic experience. Grapefruit, Sicilian lemon, lime and Seville oranges are the leading flavours backed up with herbal notes from juniper berries and coriander seeds, similar to Japanese green tea. The bitters are also perfect for cocktails and long drinks that are based on clear spirits such as gin, vodka, tequila or light rum.

Original Cucumber Bitters area revolution of flavour. Cucumber, White Grape, Grass and Lemon on the pallet. Add a splash for a great Negroni. Works perfectly with grassy, earthy sprits, try adding it with Tequila or in a gin and tonic.

Asian Road

  • 30ml Tanqueray Rangpour
  • 20ml Gabriel Boudier Kaffir Lime Leaf Liqueur
  • 1 Egg White
  • 25ml Lime Juice
  • 15ml AquaRiva Agave Syrup
  • 2 Dash The Bitter Truth Cucumber Bitters
